Dips: Guacamole

J has been craving for guacamole every other day and they are really expensive, so I decided to make my own(truth is I have a lot of time on hand). It is really easy.


Ingredients: 
- 2 ripe avocados
- 1 lime, juiced
- pinch of sea salt
- 2 tbsp red onion, diced
- 1 clove of garlic, minced
- 1 tbsp spring onion, thinly sliced
- 2 tomato, diced

Steps:
1. Cut the avocado into half, remove the seed and scoop out the avocado from the peel(Save one seed)
2. Mashed the avocado in bowl. If you like it chunky, don't mashed too long. I used a fork to mash it.
3. Add this all the rest of the ingredient. Be careful you don't want to add in too much lime juice, remember to taste before adding. Adjust salt to own preference
4. Mix them
5. Put the avocado seed in the guacamole (The guacamole will not turn brown so quickly)
6. Put it in the fridge and serve when chilled



I used green tomato so you can't see any red here. The green tomato is yummy.



I am bored, so I took a few random similar photos and thought I will shared them here. 

Next, I want to try the spicy guacamole. Will update once I get it right.

Soups: Chinese Vegetables Soup

One of the things I miss about home is homemade soup. My mum makes the most awesome soup, like the best. For the past few months, I eat out everyday (almost, unless you count instant noodle), I decide to at least try making soup once a week, best decision ever. I am going to save my ingredients and recipes here just in case I need to refer to it.

I have tried 3 different soups so far and one of them tasted wrong. I will try to get that right before saving the recipe here. Other than asking my mum, i will also refer these 2 sites for help (noobcook and joy she cook).

Just tried making this Chinese Vegetables soup yesterday.


Ingredients (Soup for two): 
- Halved Chicken, skin removed and cut into pieces
- 1 Tomato, diced
- 1 Yellow onion, diced
- 1 Carrot, diced
- 2 Potatoes,diced
- 3 stalks of celery, diced
- A Quarter of cabbage, cut into chunks 
- 5/6 dried scallops

Steps:
1. Parboiled the chicken for 3 minutes
2. Washed the chicken with cold water
3. Put the chicken and all the ingredients into the pot
4. Pour around 1.6 litres of water
5. Boiled for 10 minutes 
6. Simmer for 1 hours
7. Voila~, it is done

It looked nicer in real. 

p.s. I can't wait to go back Singapore and have mum-made soup. Cooking is really not my thing. Domesticated, not.
